Pumpkin Sheet Cake

My daughter discovered this recipe the year I was diagnosed with a wheat allergy.  She makes two versions - one with regular flour and one with a cup for cup gluten-free flour.  It's super!  Great to take to pot luck dinners. Pumpkin Sheet Cake Ingredients:   16 oz can pumpkin 2 cups sugar 1 cup vegetable oil 4 eggs, beaten 2 cups flour 2 tsp. baking soda 2 tsp. cinnamon 1/4 tsp. nutmeg 1/2 tsp. salt In a mixing bowl, beat the pumpkin, sugar and oil.  Add eggs and mix well.  Combine the dry ingredients and add to the pumpkin mixture, beating until well blended.  Pour into a greased 10×15 inch baking pan.  Bake for 25-35 minutes at 350 degrees. Chocolate Raspberry Sandwich Cookies

Chocolate Raspberry Sandwich Cookies makes about 24 sandwiches I got this from a website that is no longer available on the web.  Good thing I saved the recipe! For the cookies: 1/4 cup unsweetened cocoa powder 2 cups all purpose flour 1 1/2 cups sugar 1 1/2 teaspoons baking soda 3/4 teaspoon baking powder 1 teaspoon salt 2 eggs 1/2 cup vegetable oil For filling: 6 ounces cream cheese, softened 3 Tablespoons butter, softened 1 teaspoon milk 1/2 teaspoon vanilla 2 cups powdered sugar 3 tablespoons raspberry jam (you can add an extra tablespoon of jam to make the color darker if desired) In a large mixing bowl add cocoa powder, flour, sugar, baking soda, baking powder, and salt.  Stir together to combine.  In a small bowl add egg and vegetable oil.  Beat well with a fork.  Add egg mixture to flour mixture.  Beat with an electric mixer until all ingredients are well combined.  The dough will be thick ...

Stove Top Fudge

This is from a YW leader in Iona that Crystal and Savannah had.  She made it one year and the girls begged for the recipe. 3 c sugar 2/3 c evaporated milk 1 jar marshmallow creme 1 tsp vanilla 3/4 c butter 12 squares semisweet baking chocolate 1 c chopped walnuts Line a 9x9 pan with foil.  Place sugar, butter and milk in saucepan.  Bring to a boil stirring constantly.  Boil to 234* about 4 min.  Remove from heat.  Add marshmallow creme and chocolate squares.  Stir until melted.  Add vanilla and walnuts.  Mix well.  Pour into pan and let stand until completely cool.  (Abt 4 hours)  Cut into squares. Makes 3 lbs (about 40 pieces)

Oatmeal Chocolate Chip Cookies

OATMEAL CHOCOLATE CHIP COOKIES (can make into bar cookies) Ingredients: 1 cup butter, softened 1 cup packed light brown sugar 1/2 cup white sugar 2 eggs 2 teaspoons vanilla extract 1 3/4 cups all-purpose flour 1 teaspoon baking soda 1/4 teaspoon salt (omit if using salted butter) 3 cups quick-cooking oats 1 cup chopped walnuts 1 cup semisweet chocolate chips Directions: Preheat the oven to 325 degrees F (165 degrees C). (May increase to 335 F) In a large bowl, cream together the butter, brown sugar, and white sugar until smooth.  Cream butter and sugar until very light and fluffy 4 or 5 mins. if you like.  Beat in eggs one at a time, then stir in vanilla. Combine the flour, baking soda, and salt;  Add the dry ingredients and mix by hand just 'till blended.
